Menma is a traditional ingredient of Japanese cuisine, particularly associated with ramen dishes. These are bamboo shoots marinated and seasoned with a combination of ingredients that give them a unique and distinctive flavour.

The flavor of menma is a balance between sweetness, saltiness and a slight hint of acidity. It has a slightly crunchy texture and a unique flavor that goes well with the rich flavors of ramen dishes.
Instructions
- Dilute the Noodz Marisauce in a bowl (follow the instructions on the bag);
- Place the bamboo shoots in a pan, turn on the heat to medium-high and begin to brown, stirring frequently;
- Let the water inside the bamboo shoots evaporate, they will take on flavor more easily;
- Season with white pepper;
- (add a drop of sesame seed oil);
- Pour in the previously diluted Noodz Marisauce and bring to the boil;
- Cook for a few minutes to let the flavor absorb;
- While it is still boiling, cover the bamboo shoots entirely with kitchen paper using the wooden spoon or ladle you are using. The paper will then absorb the liquid;
- Turn off the heat, let cool to room temperature and marinate in the refrigerator overnight or at least 8 hours;
- Removed from the refrigerator, remove the paper and drain them. If you choose to keep the remaining marinade to use it again as a condiment, you can add as much soy sauce and sugar (better cane) to adjust the flavor;
- The menu is ready!
- It can remain in the refrigerator for 3 to 5 days.
