"I'd love a ramen like the ones in Japan..."

Andrea has just got back from his first trip to the Far East, and there's a flavour in his head that won't let go: a real ramen, the kind he can't find in Italy. And yet it can't be that different from the broth for cappelletti, can it?

"But it takes hours!" "What if we did it in five minutes?"

Francesco has known him for years; they've been friends since secondary school. He's used to these sudden ideas, but he has no clue that one born right there at the stove is about to change their lives.

It was 2018. From that lunch on, we started trying for real. No multinational behind us, just the two of us. Broth, noodles, kansui, flours... For five years we took everything apart and put it back together, countless times, always getting better. In the end, we made it.
